Lauki is mostly water — north of 92% by weight in the fresh vegetable — which makes it one of the lower-yield items we dry. A denser root vegetable reduces down at a relatively efficient ratio; bottle gourd needs a proportionally larger volume of fresh input to reach the same finished weight, and that low starting density is also why the flesh needs a longer, gentler drying curve than a denser vegetable to avoid scorching the outer surface before the core moisture is fully out.
One Cut, Two Finishes
We only run bottle gourd in two forms — flakes and powder — and there isn’t a meaningful third format worth adding, since lauki’s mild flavour and pale green-cream colour don’t lend themselves to specialty cuts the way a firmer or more pigmented vegetable might. Flakes (3-5 mm) keep a visible, pale piece for instant soups and snack mixes.
