Dehydrated Ginger

Drying ginger doesn’t just remove water — it changes what the ginger actually tastes like. Fresh ginger’s pungency comes mostly from gingerol, but heat converts a portion of that gingerol into shogaol, a compound that reads as noticeably sharper and hotter than fresh ginger by weight. That’s a real difference a buyer substituting dried for fresh needs to account for in a formulation, not just a shelf-life or convenience trade-off — dried ginger isn’t a preserved version of fresh ginger’s flavour, it’s a related but distinct one.

Five Forms From One Rhizome

Whole dried ginger keeps the piece recognisable and is used where a formulation calls for a rehydrated chunk rather than a fragment.
