Dehydrated Green Chilli

Heat in green chilli isn’t a fixed number — capsaicin concentration shifts with growing season, plant maturity and even the specific harvest lot, which is why we describe pungency as a reference range rather than a guaranteed figure batch to batch. For a buyer who needs consistent heat in a finished product, that variability matters more for chilli than for almost any other item we process; it’s worth requesting a heat reading or a sample from the specific lot you’ll be buying rather than assuming last order’s batch matches this one exactly.

Flakes, Bits or Powder

Powder is ground fine for even distribution of both colour and heat through a masala or instant food formulation — the form where pungency is most evenly spread through the batch rather than concentrated in individual pieces. Flakes keep a visible piece for topical seasoning on snacks, pizza and QSR toppings, and for sauces, pickles and chutneys where the buyer wants chilli to register visually. Bits are cut smaller than flakes, around 5x5mm, and go mostly into instant noodles and soup mixes where a finer piece rehydrates within the product’s own short cook time.

Manufacturing Process

Farm-fresh green chillies are inspected and graded on arrival, then washed, de-stemmed and cut to the ordered size before hot-air dehydration. The dried product is sieved for particle consistency, passed through metal detection, and packed in moisture-proof bags to hold onto colour and pungency before they degrade in storage.

Where It’s Used

Masala and spice blend manufacturers are the main buyer of powder. Snack seasoning, pizza and QSR supply chains take flakes for topical use, while instant noodle and soup mix producers are the primary buyer of bits. Sauce, pickle and chutney manufacturers use a mix of flakes and powder depending on whether they want visible heat or blended heat, and HoReCa kitchens buy across all three forms.
