Dehydrated Onion Flakes & Powder

Onion is the highest-volume item in our dehydration line — three colour grades (red, white, pink) run through the same hot-air driers, so batch-to-batch consistency comes down to how tightly we control slice thickness before drying rather than the drying step itself. A 3-5mm flake rehydrates in roughly the same time as a fresh diced onion; ground below that, moisture pickup during grinding becomes the thing that ruins a powder batch, which is why powder is milled last, right before packing, not stockpiled as flake and ground on demand.

Forms and What Each One Is Actually For

Flakes (3-5mm) go into products where the buyer wants to see a visible piece — pickles, seasoning blends, RTE garnish. Granules run finer than flakes but coarser than powder, and are the form most sauce and ketchup manufacturers ask for because they hydrate faster in a liquid base without clouding it. Powder is for masalas and dry spice blends where a visible piece would be a defect. Chopped and minced onion are a cut distinction, not a drying distinction — used wherever a recipe already calls for fresh chopped onion and the buyer wants to drop dehydrated in as a direct substitute. Toasted, roasted and oil-fried onion are a separate process on top of dehydration — the caramelisation happens after drying, which is why the flavour profile is noticeably different from a plain dried flake even though the raw material is identical.

Processing

Onions arrive from source, get graded by colour and size, and go through peeling, washing and slicing to the size the order calls for before drying. What’s not obvious from the spec sheet: pink onion runs a slightly shorter drying cycle than red or white because of how its layers separate, and getting that wrong is the most common cause of an off colour in a finished batch. After drying, everything is metal-detected and packed the same day to limit moisture reabsorption — onion picks up ambient moisture faster than most of the other vegetables we process, which is also why we don’t hold ground powder in bulk before packing.

Where This Gets Used

Masala and spice blend manufacturers take powder almost exclusively. Instant noodle and soup mix producers want flakes or granules that rehydrate within the product’s own cook time. Sauce, ketchup, pickle and chutney manufacturers are the main buyers for granules specifically. Bakery, marinade and hamburger-seasoning producers tend to order chopped or minced. HoReCa and institutional kitchens buying for garnish or bulk cooking usually take toasted or fried onion rather than plain flakes.
