Dehydrated Green Peas

Green peas are the one item in this batch that goes through a blanching step before drying, not just a wash and cut. Blanching briefly in hot water inactivates the enzymes that would otherwise keep breaking down colour and flavour in storage, and it’s the reason dried peas hold their green colour over a 12-month shelf life instead of fading toward grey-green the way an unblanched product would. Most of the vegetables we process skip this step entirely; peas need it because of how enzymatically active a legume is compared to a root or bulb vegetable.

One Form, Graded on Roundness

Green peas are supplied whole and dried, not cut into flakes or ground — the spec calls for “uniform, free-flowing” peas, which means the real quality variable here is size and shape consistency rather than particle size the way it is for a diced vegetable. Broken, undersized or discoloured peas are screened out before packing, because a formulator running peas through automated dosing equipment needs a batch that flows and measures consistently, not just one that tastes right.

Manufacturing Process

Fresh peas are inspected and graded on arrival, then washed, blanched to inactivate enzymes, and dried under controlled hot-air dehydration to remove moisture while holding onto colour and natural sweetness. The dried peas are screened for size and shape, passed through metal detection, and packed the same day in moisture-proof bags.
