Dehydrated White Onion Flakes

White onion carries no anthocyanin pigment, so colour isn’t the main risk during drying the way it is with red onion — the risk instead is browning. White onion’s naturally higher sugar content means the cut edges of a flake can caramelise if drying temperature runs even slightly high, turning a creamish-white flake tan at the edges. Getting a clean, uniform white flake through to packing is a temperature-control problem more than anything else.

Why Flakes, Specifically

At 3-5mm, flakes are cut thick enough to avoid a second risk that comes with drying sugar-rich onion: case hardening, where the outer surface dries and seals before the centre has released its moisture, trapping water inside a piece that looks fully dried. Getting the drying curve right so the centre and surface finish together is what keeps a flake batch from showing soft or discoloured centres days after packing — something a buyer inspecting only the surface wouldn’t catch on receipt.

Processing

White onion is inspected and graded on arrival, then peeled, washed and sliced to 3-5mm before controlled hot-air dehydration at a temperature profile tuned lower and slower than red onion’s, specifically to manage sugar caramelisation and case hardening. Flakes are then sieved for uniform size, colour-sorted, metal-detected and packed in moisture-proof bags.

White onion’s mild, sweet flavour makes it the preferred colour for buyers who don’t want red onion’s sharper pungency coming through — mild seasoning blends, Western-style sauces and dressings, and delicate RTE preparations lean on white over red for that reason.
