Dehydrated Tomato Flakes & Bits

Tomato loses more water in drying than almost anything else we process — fresh tomato runs around 94-95% water, so what comes out the other end of the drier is roughly a tenth the starting weight, and it rehydrates back at approximately 1:8 to 1:9. That’s double the rehydration ratio of onion or potato, and it’s the reason tomato’s flavour and colour come out so concentrated: everything that made the fresh fruit red and tangy is packed into a much smaller volume.

Flakes and Bits

Flakes are cut to a uniform 5x5mm before drying, giving a consistent piece size that rehydrates evenly. Bits are a coarser, less uniform cut of the same dried tomato — irregular chunks rather than a fixed dimension — and are typically what pizza and bakery topping buyers ask for when they want visible texture rather than a uniform fleck. We also produce tomato powder on request for buyers who need the flavour and colour without any visible piece at all.

Processing

Fresh tomatoes are inspected and graded on arrival, then washed and sliced or roughly cut to size before hot-air drying. Because tomato starts with so much more water than other vegetables in our range, the drying cycle runs longer to reach the same target moisture, and batches are watched for uneven drying at the cut edges, where sugar content can cause localised scorching if the temperature isn’t tightly held.

Sauce, ketchup and pasta topping manufacturers take tomato for its concentrated flavour as much as convenience. Instant noodle and soup mix producers use flakes where the piece needs to rehydrate within the product’s cook cycle. Bakery and pizza topping buyers lean on bits for visible texture on a finished product. Masala and seasoning blend manufacturers use it where a tangy, umami note is needed without fresh tomato’s short shelf life.
