Dehydrated Capsicum (Bell Pepper) Flakes & Powder

Red and green capsicum aren’t two different products — they’re the same fruit at two different ripeness stages, and that shows up in how each one dries. Green capsicum is harvested unripe, lower in natural sugar, and holds its colour through a standard drying cycle without much fuss. Red capsicum is the fully ripened fruit, higher in sugar, and needs a slightly more controlled temperature so the sugars don’t caramelise and dull the colour before the moisture is fully out. We run the two colours as separate batches through the driers rather than mixing them through the same cycle.

Skin Matters More Than You’d Think

Capsicum has a waxy outer skin that resists moisture loss more than most of the vegetables we process — a whole or thick-cut piece would dry unevenly, going crisp on the surface while staying wet inside. That’s why capsicum is always deseeded and cut down before drying rather than processed as a larger piece; the cut size is doing real work here, not just meeting a spec-sheet number.

Forms

Flakes are cut to size on request (10x10mm is typical) and are the form most seasoning, topping and dip manufacturers ask for, since a visible red or green piece is part of the product’s visual appeal. Powder is milled after drying for masalas, sauces and soups where an even colour and flavour distribution matters more than a visible piece.
