Dehydrated Curry Leaves & Powder

Curry leaf is the only leaf crop in our line that has to be separated from a woody stem before it ever reaches the washing tank — each leaflet is stripped by hand off its central stalk, a step that doesn’t exist for a bulb or root vegetable and is the main reason curry leaf batch sizes are more sensitive to labour availability than most other items we process. What follows is a lower-temperature drying cycle than most vegetables get, because curry leaf’s chlorophyll browns quickly under high heat; holding the temperature down is what keeps the finished leaf a genuine green rather than a dull olive-brown, and is also why nothing is added back in afterward — the spec calls for a naturally green, naturally aromatic leaf, free from artificial flavours, full stop.

Whole Leaf or Powder

We keep curry leaf to two forms rather than the five or six some of our other lines run: whole dried leaf, which holds its shape and is picked out visually in seasoning blends and HoReCa tempering use, and powder, milled fine enough to disappear into a masala or soup base without leaving leaf fragments behind. There’s no minced or granulated grade in between — the leaf’s fibrous structure doesn’t cut cleanly at an intermediate size the way a root vegetable does, so buyers choose between the two extremes rather than a middle ground.

Where It’s Actually Used

Masala and spice blend manufacturers are the largest buyer of curry leaf powder, and pickle and health food producers take a good share of both forms. Less obvious is the hair oil and personal-care segment — curry leaf has a long-standing place in Ayurvedic hair oil formulations, and it’s a real enough share of our order book that we treat it as its own category rather than folding it into “other.” Snack seasoning, soup powder and extruded/instant food producers round out the rest of demand, generally favouring the powder form for even distribution.

Handling Notes

Curry leaf is stored at normal room temperature without exposure to wet conditions — it doesn’t need the sub-20°C cold storage some of our other lines call for, but humidity is still the enemy of a 12-month shelf life claim, so packing is PP bag followed by HDPE, sealed the same day it’s dried.
